Crustless Spinach Quiche Cups

1 package (10 oz.) frozen chopped spinach, cooked and drained
3/4 cup egg substitute
1 cup skim milk*
1 package (6 oz.) reduced fat mozzarella, sharp cheddar, or combination shredded cheese*
1 1/2 Tbsp minced onion**

Preheat oven to 350 degrees. Cook spinach according to package directions. While spinach is cooking, combine remaining ingredients in a large bowl. Make sure to drain spinach before adding to bowl. Mix well. Spray two regular-size muffin tins with non-stick cooking spray. Pour mixture evenly into muffin tins, approximately 3/4 full. Bake for 50 minutes to 1 hour.

* May substitute rice or soy products
** Adjust to taste
