Moist and Tender Carrot Cake

Moist and Tender Carrot Cake (GF, EF, can be DF and nut-free)

2 large ripe bananas, mashed
1 cup natural applesauce
1/2 cup evaporated cane juice crystals (or organic brown sugar)
1/3 cup cooking oil
1 1/2 cups grated carrots
1/2 cup raisins or chopped nuts, if desired
2 cups teff flour (or 1 cup each teff and sorghum)
1/4 cup ground flaxseed
1 tablespoon baking powder
1/2 teaspoon salt
Up to 1/3 cup water, to achieve a moist batter

Combine mashed bananas, applesauce, cane juice crystals, oil, carrots, and raisins
or nuts (if desired) in a large mixing bowl. Stir in flour, flax, baking powder,
salt, and as much water is needed to achieve a moist batter (thicker than
“traditional” gluten-containing cake batter, but thinner than cookie dough). Pour
into a greased 9 x 9 baking pan. Bake at 350F for 30-40 minutes, or until a
toothpick inserted in the center comes out clean. When cool, frost with Pillsbury
Cream Cheese frosting (oddly, it is vegan and both gluten and dairy free—go figure)
or with the dairy or non-dairy cream cheese frosting recipe below, or another of
your choice:

Cream Cheese Frosting
1 ½ cups powdered sugar
3 ounces Neufchatel cheese
1 tablespoon butter
1/2 teaspoon milk

Beat sugar, cheese, butter, and milk until light and fluffy. Spread over cooled
cake. Store cake and any leftover frosting in the fridge.

Vegan Cream Cheese Frosting
1 8-oz container tofu cream cheese
1/4 cup non-hydrogenated vegan margarine
1 teaspoon vanilla
2 cups powdered sugar
1-2 teaspoons soy milk

Beat all ingredients until light and fluffy. Spread over cooled cake. Store cake and
any leftover frosting in the fridge.

Cheryl: a very healthy cake. Between all of the fruit, veggies and teff, it’s loaded with fiber, vitamins and minerals. I added too much water and will have to scale back next time. My tasting partner said it reminded her of a larabar.

Erik: it was pretty bland and didn’t have a lot of flavor. Not crazy about the texture, either.
