Chocolate Coconut Amaranth Bread

This one is gf/cf/sf/ef/yf and low sugar
packed with protein, and omega 3 and 6. We used maple sugar. If you can do
sugar this would make a great cake basic recipe by adding like pear sauce or
sugar. Neither which we can do on this day though.

-1 and 3/4- 2 cups amaranth flour
-2 tbls arrowroot
-3 tbs amaranth starch
-3/4 cup coconut milk (we used ty kitchen pure coconut milk) with a little
water
-1/4 cup coconut oil softened
-1/4 cup maple syrup (you could also use pear sauce or smooshed bananas in
place of)
-1 tbs vanilla (alcohol free
-1/2 cup shredded coconut- this is dry in a plastic bag we got it from the
HFS
-1 block-2 sections of bakers chocolate
-1/4 tsp cinnamon
-1/4 tsp cloves (ground)
-1/4 tsp nutmeg
-3 tbs egg replacer- we used energy
-6 tbsp sparkling water (to activate the egg replacer-so this in a separate
bowl till fluffy then add in)
-5 tbs maple sugar (1 tbs spoon put aside for top of bread)
-2 tbsp of puffed amaranth (put aside for top of bread)

ok place all but the last 4 ingredient in a bowl. with the egg replacer
made of potato (energy) and the sparkling water whip till fluffy then add
in. blend it all with a hand mixer and then add in the 4 tablespoons of
maple sugar. this will be a very fluffy mix. place in a greased glass pan
and then sprinkle the top with the puffed amaranth and 1 tbsp of maple sugar
that was put a side. the texture on this is just like whole wheat home made
bread but smells sweet even though it’s not. have fun. we did this at
300-350 for about an hour. do the tooth pick test on it to know when done.

if you wanted to make this into a cake use a cake pan with 1/4-1/2 cup pear
sauce, increase the maple syrup by 1/4 cup, make sure the flour is a full 2
cups and add one ripe banana….I think this would work but have not tried
it. enjoy your nutrition…..and inhale lots it smells so good when it
cooks
