GFCF Minestrone Soup That Kids Love

4 cups organic GFCFSY chicken broth
1.25 lbs of ground lean turkey
1/2 onion, chopped finely
1 clove garlic, chopped
2 carrots, chopped FINELY
2 zucchini, chopped FINELY
1 cup chopped spinach (chop fine)
1 15 oz can cannellini or northern beans
2-3 Tbsp. GF Chili Powder
1/4 cup olive oil
2 cups brown rice pasta, elbow style

In large pot, saute onion, chopped garlic in olive oil for 3 minutes. Add turkey and brown. Add chili powder, mix well. and turkey in olive oil. Add other vegetables, beans (well drained and rinsed) and chicken broth. Simmer for at least one hour for best flavor. Add pasta, cook additional 15 minutes and serve. Its wonderful! If you have a veggie-finicky child, put veggies in food processor first so that they are almost pureed.
