GF Wake-up muffins

GF Wake-up muffins

1 1/2 cups Brown rice flour (fine)
3/4 cup Sweet rice flour
1/4 cup tapioca starch
2 tsp. xanthan gum
1 tsp. unflavored gelatin
3/4 cup sugar
2 tsp. baking soda
1/2 tsp. salt
3 tsp. cinnamon
2 cups grated carrots
1 apple, peeled and grated
2 eggs and 2 egg whites
1/2 cup canola oil
3/4 cup unsweetened applesauce
1 tsp. vanilla
8 oz. crushed pineapple, drained
3/4 cup flaked coconut
optional: 1/2 cup nuts and/or raisins

Combine dry ingredients in bag or bowl and mix well.In large bowl beat eggs, oil, applesauce and vanilla. Stir in apples, carrots, pineapple, and coconut (and nuts or rasins if using).

Scoop into muffin tins lined with papers. Fill 3/4 full. Bake at 350 degrees 20-25 mins until toothpick comes out clean. Remove from pan, cool on rack. Makes about 22 muffins.
